Longtou Road on Gulangyu Island

This was originally an imperial dish served in palaces. According to a legend, it was created by a famous doctor of the Shang dynasty named Wu Zhong, and later it was prepared by the public and became a famous dish.It is made with red-faced Muscovy ducks. The duck should be fried in sesame oil until it smells fragrant, then ginger and rice wine is added and it is left to stew.This is a delicious dish with sweet and hot flavors. It has the added health benefits of invigorating the lungs, soothing the liver, relaxing tendons, improving circulation, dispelling colds, reducing phlegm, along with other effects.
Dajiaxiang Ginger Duck (Siming Nan Lu Chain) is a small chain of street cafes, whose delicious dishes can be smelled half a street away. This is one of Xiamen’s most famous snacks.The soup is bright red in color and has a salty, fresh, and spicy taste.Among the main ingredients are the finest shrimp heads, which are mixed with salt and preserved for more than two months. The shrimps are finely ground into a paste which is added, along with garlic sauce, to hot oil and fried, the dish is completed by adding five spice powder, curry powder, chili powder, sesame seeds, and other ingredients once cooled.
